Vegan Chocolate Brownies

Vegan brownies are just as, if not more, delicious than a dairy-based offering, especially with the addition of cherries and walnuts, for a sticky and nutty crunch. Delicious and rich, one of these will take you to a very happy place, and they're super easy to make!

Ingredients (makes 12)

150g vegan dark chocolate - I use Green & Black's Organic 85%

150g dairy-free spread - I use Pure Sunflower Oil

2 tsp vanilla bean paste

250ml almond milk

50g ground almonds

75g cocoa powder

150g self raising flour

200g caster sugar

large pinch salt

100g walnuts

200g glacé cherries

  1. Preheat your oven to 180c, and line a standard size baking tin with greaseproof paper.

  2. Melt the chocolate and dairy-free spread in a bowl over a bain-marie, set aside to cool off a little, then add the vanilla paste and almond milk and mix thoroughly.

  3. In another bowl combine the ground almonds, cocoa powder, flour, sugar and salt, then add the dry ingredients to the wet and combine. 

  4. Halve half the cherries and add to the brownie mix along with half the walnuts, then pour into the baking tin, using the remaining walnuts and cherries to decorate the brownies by pushing them in to the mix.

  5. Cook for 35/40 minutes, or until fully cooked on the outside, but still unset and gooey in the middle.

  6. Leave to cool and firm up for at least 30 minutes before serving.
